Land Processed Salted Fish
Cod (Gadus morhua) are primarily used for salt fish production, but ling (Molva molva) and tusk (Brosme brosme) are also available. The primary destination for this product is Spain, where it is called “bacalhau” and considered a delicacy.
Fillets
Dry salted cod fillets are packed in 25 kg boxes, and graded in the following sizes: 100-200 g, 200-400 g, 400-700 g, 700-1000 g and +1000 g. They are graded in qualities 1 & 2 (A), 3 (B), and wrack (C).
Dry salted ling fillets are packed and graded in the same options as cod.
Dry salted tusk fillets are packed in the same options as cod fillets, but graded in the following sizes: 50-100 g, 100-200 g, 200-400 g, 400-700 g, and +700 g.
Splitted
Dry salted splitted cod is packed in 25 kg boxes, 500 kg containers, or according to order. They are graded in the following sizes: 300-500 g, 500-800 g, 800-1200 g, 1200-1700 g, 1700-2700 g, 2700-4000 g, and +4000 g. Quality options include 1 & 2 (A), 3 (B), and wrack (C).
