Frozen-at-Sea Saithe

Saithe (Pollachius virens) is trawl caught by JFK in the Barents Sea and the Norwegian Sea, and in the waters around the Faroe Islands. This white fish has a strong flavor and is a multipurpose economic alternative to cod.

Shatter-packed fillets

Fillets, skin on or skinless, pin bone in or pin bone out. The fillets are shatter-packed in 15 lb. or 14 lb. blocks, depending on pin bone preference, and graded in the following sizes: 2-5 oz., 5-8 oz, 8-16 oz, 16-32 oz and 32+ oz Three blocks are packed in a master carton.

Headed and gutted

Whole saithe, only headed and gutted, is frozen and packed in 12 kg or 24 kg blocks and graded in following sizes: 0-1.2 kg, 1.2-2.3 kg, and 2.3+ kg, or specialized according to order.
