Steps are taken at every juncture of the fishing process to ensure that JFK’s frozen-at-sea products are fresh for the customer. Nets are towed for a short period of time to prevent damage to the fish. When the trawl comes on deck, the live fish are immediately put into tanks for further processing. Frozen-at-sea has been called “fresher than fresh,” because within four hours from leaving the sea fish are already processed and frozen.
All JFK processing factories and trawlers produce in accordance with HACCP principles.
